Recipe: Baked Cod with White Beans & Kale

Ingredients
- 4 cod fillets
- 1 can white beans
- 3 cups chopped kale
- 2 tbsp olive oil
- 2 cloves garlic
- 1 lemon
- 1 tsp salt
- 1/2 tsp pepper
Method
1) Heat oven to 400°F.
2) Toss beans and kale with olive oil, garlic, salt, and pepper in a baking dish.
3) Place cod on top and season with lemon, salt, and pepper.
4) Bake 15 minutes until fish flakes and kale is tender.
Tips
- Add cherry tomatoes for extra color.
- Haddock also works.
