Ingredients
- 3 cups cooked chicken, chopped
- 1 romaine heart, chopped
- 1 cucumber, diced
- 1 cup cherry tomatoes
- 1/4 red onion, sliced
- 1/3 cup olives
- 1/3 cup feta
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp oregano
Method
1) Combine chicken and vegetables in a large bowl.
2) Whisk olive oil, lemon juice, and oregano.
3) Toss salad and top with feta and olives.
Tips
- Add chickpeas to stretch it further.
- Best dressed right before serving.
