This banana walnut baked oatmeal is useful for breakfast meal prep and easy enough for a relaxed weekend bake. It slices cleanly after cooling a bit and reheats well through the week. Serves 6.
Ingredients:
- 2 ripe bananas, mashed
- 2 cups old-fashioned oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon kosher salt
- 2 eggs
- 1 3/4 cups milk
- 1/4 cup maple syrup
- 2 tablespoons melted butter or coconut oil
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts
Instructions:
- Heat oven to 375°F and grease an 8-inch square baking dish.
- In a large bowl, stir together the oats, baking powder, cinnamon, salt, and walnuts.
- In another bowl, whisk the bananas, eggs, milk, maple syrup, melted butter, and vanilla.
- Pour the wet mixture into the dry ingredients and stir well.
- Spread into the baking dish and bake 35 to 40 minutes, until set and lightly golden.
- Cool for 10 minutes before slicing and serving.
