Brown Sugar Cinnamon Apple Crisp

Apple crisp is one of the easiest desserts to make well at home. This version keeps the filling simple and uses a buttery oat topping that turns crisp and golden in the oven. It is ideal with vanilla ice cream but good on its own too. Serves 6 to 8.

Ingredients for the filling:

  • 6 medium apples, peeled and sliced
  • 2 tablespoons lemon juice
  • 1/3 cup brown sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon fine salt

Ingredients for the topping:

  • 3/4 cup old-fashioned oats
  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 6 tablespoons cold unsalted butter, cut into small pieces

Instructions:

  1. Heat oven to 350°F. Lightly butter an 8-inch square baking dish.
  2. In a large bowl, toss the apples with lemon juice, brown sugar, flour, cinnamon, and salt. Spread evenly in the baking dish.
  3. In another bowl, combine oats, flour, brown sugar, cinnamon, and salt. Cut in the butter with your fingers or a pastry cutter until the mixture forms coarse crumbs.
  4. Sprinkle the topping evenly over the apples.
  5. Bake 40 to 45 minutes, until the filling is bubbling and the top is deeply golden.
  6. Let cool at least 15 minutes before serving.

Why it works: The small amount of flour in the filling helps the apple juices thicken, while the oat topping stays crisp thanks to cold butter and a balanced ratio of flour to oats.

Timing: Prep 20 minutes, bake 45 minutes, cool 15 minutes.

Use a mix of tart and sweet apples if possible for better flavor. Leftovers reheat well in a low oven, which helps restore the crisp topping better than the microwave.
