Apple crisp is one of the easiest desserts to make well at home. This version keeps the filling simple and uses a buttery oat topping that turns crisp and golden in the oven. It is ideal with vanilla ice cream but good on its own too. Serves 6 to 8.
Ingredients for the filling:
- 6 medium apples, peeled and sliced
- 2 tablespoons lemon juice
- 1/3 cup brown sugar
- 1 tablespoon all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon fine salt
Ingredients for the topping:
- 3/4 cup old-fashioned oats
- 3/4 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 6 tablespoons cold unsalted butter, cut into small pieces
Instructions:
- Heat oven to 350°F. Lightly butter an 8-inch square baking dish.
- In a large bowl, toss the apples with lemon juice, brown sugar, flour, cinnamon, and salt. Spread evenly in the baking dish.
- In another bowl, combine oats, flour, brown sugar, cinnamon, and salt. Cut in the butter with your fingers or a pastry cutter until the mixture forms coarse crumbs.
- Sprinkle the topping evenly over the apples.
- Bake 40 to 45 minutes, until the filling is bubbling and the top is deeply golden.
- Let cool at least 15 minutes before serving.
Why it works: The small amount of flour in the filling helps the apple juices thicken, while the oat topping stays crisp thanks to cold butter and a balanced ratio of flour to oats.
Timing: Prep 20 minutes, bake 45 minutes, cool 15 minutes.
Use a mix of tart and sweet apples if possible for better flavor. Leftovers reheat well in a low oven, which helps restore the crisp topping better than the microwave.
