These cinnamon apple yogurt muffins are soft, lightly spiced, and practical for breakfast or snacks through the week. The yogurt keeps the crumb tender, and diced apple adds moisture without making the batter fussy. Makes 12 muffins.

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 2/3 cup brown sugar
  • 2 large eggs
  • 1/2 cup plain yogurt
  • 1/3 cup neutral oil
  • 1 teaspoon vanilla extract
  • 1 cup peeled and diced apple
  • 2 tablespoons rolled oats, optional for topping

Instructions:

  1. Heat oven to 375°F. Line a 12-cup muffin tin with liners or grease it lightly.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, salt, and brown sugar.
  3. In a second bowl, whisk the eggs, yogurt, oil, and vanilla.
  4. Stir the wet ingredients into the dry ingredients just until combined, then fold in the diced apple.
  5. Divide the batter among the muffin cups and sprinkle with oats if using.
  6. Bake 18 to 20 minutes until the tops spring back lightly and a tester comes out clean.
