This honey garlic baked salmon with rice is a reliable dinner when you want something balanced without making the kitchen chaotic. The glaze is simple, and the salmon cooks quickly in the oven. Serves 4.

Ingredients:

  • 1 1/4 pounds salmon fillet, cut into 4 pieces
  • 2 tablespoons honey
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon lemon juice
  • 1/2 teaspoon black pepper
  • 1 cup uncooked jasmine rice
  • 2 cups water
  • 2 cups steamed broccoli for serving
  • 2 scallions, sliced

Instructions:

  1. Heat oven to 400°F. Line a small baking dish or sheet pan with parchment.
  2. Stir together the honey, soy sauce, olive oil, garlic, lemon juice, and black pepper.
  3. Place the salmon on the pan and brush generously with the glaze.
  4. Bake for 12 to 15 minutes, brushing once more halfway through, until the salmon flakes easily.
  5. While the salmon bakes, cook the rice with the water according to package directions.
  6. Serve the salmon over rice with broccoli and scallions.

Why it works:

The glaze gives the salmon a sweet-savory finish without needing a long marinade.

Timing:

Prep 10 minutes, cook 20 minutes, total about 30 minutes.
