These honey garlic salmon rice bowls are a strong weeknight option when you want something balanced that still feels a little special. The sauce is simple, the salmon cooks quickly, and the rice makes the meal satisfying. Serves 4.

Ingredients:

  • 1 1/4 pounds salmon fillet, cut into 4 pieces
  • 2 cups cooked rice
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon rice vinegar
  • 1 cucumber, sliced thin
  • 1 avocado, sliced
  • 2 green onions, sliced
  • Sesame seeds, optional

Instructions:

  1. Heat oven to 425°F. Place the salmon on a lined sheet pan and rub with olive oil, salt, and pepper.
  2. Stir together the soy sauce, honey, garlic, and rice vinegar. Spoon over the salmon.
  3. Bake 10 to 12 minutes until the salmon flakes easily.
  4. Divide the rice among bowls. Top with salmon, cucumber, and avocado.
  5. Spoon any pan juices over the bowls and finish with green onions and sesame seeds if using.
