2026-05-10

These rice bowls are quick, savory, and balanced with a cool crunchy side. Serves 4.

Ingredients:

  • 1 pound ground beef
  • 1 tablespoon neutral oil
  • 2 teaspoons grated fresh ginger
  • 2 cloves garlic, minced
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon black pepper
  • 4 cups cooked rice
  • 1 large cucumber, thinly sliced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon salt
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds, optional

Instructions:

  1. Toss the cucumber with 1 tablespoon rice vinegar, sesame oil, and salt. Set aside.
  2. Heat the neutral oil in a skillet over medium-high heat. Add the beef and cook, breaking it up, until browned.
  3. Stir in the ginger and garlic for 30 seconds.
  4. Add the soy sauce, honey, remaining 1 teaspoon rice vinegar, and black pepper. Cook 2 minutes until glossy.
  5. Divide the rice into bowls and top with the beef mixture.
  6. Add the cucumber salad, then finish with green onions and sesame seeds.

Why it works:

The quick cucumber salad cuts through the richness of the beef and keeps the meal from feeling too heavy.

Timing:

Prep 10 minutes, cook 15 minutes, total about 25 minutes.
