This maple Dijon pork tenderloin with roasted carrots is a solid choice when you want a dinner that feels polished but stays approachable. The glaze is sweet, sharp, and savory, and the carrots roast alongside for an easy side. Serves 4.
Ingredients:
- 1 pork tenderloin, about 1 to 1 1/4 pounds
- 1 pound carrots, peeled and cut into sticks
- 2 tablespoons olive oil, divided
- 1 teaspoon kosher salt, divided
- 1/2 teaspoon black pepper
- 2 tablespoons Dijon mustard
- 1 tablespoon maple syrup
- 2 cloves garlic, minced
- 1/2 teaspoon dried thyme
Instructions:
- Heat oven to 425°F. Line a sheet pan with parchment.
- Toss the carrots with 1 tablespoon olive oil, 1/2 teaspoon salt, and a little pepper. Spread on the pan and roast 10 minutes.
- Pat the pork dry. Stir together the remaining olive oil, remaining salt, pepper, Dijon, maple syrup, garlic, and thyme. Rub over the pork.
- Move the carrots aside and place the pork on the pan.
- Roast 20 to 24 minutes, until the pork reaches 145°F in the thickest part.
- Rest 5 to 10 minutes before slicing and serving with the carrots.
