Roast Vegetable and Goat Cheese Tart (Puff Pastry)

Ingredients
- 1 sheet puff pastry, thawed
- 1 small zucchini, half-moons
- 1 red bell pepper, strips
- 1 small red onion, slices
- 2 tbsp olive oil
- Salt, pepper
- 4 oz goat cheese, crumbled
- 1/2 cup shredded mozzarella (optional)
- 1 tsp dried thyme
- 1 egg (for egg wash)
Method
1) Heat oven to 400ยฐF. Toss zucchini, pepper, onion with oil, salt, pepper. Roast 18โ20 minutes until tender; cool slightly.
2) Lay puff pastry on parchment-lined sheet. Score 1-inch border and prick center with a fork.
3) Spread roasted vegetables inside border. Dot with goat cheese, add mozzarella if using, and thyme.
4) Brush border with beaten egg. Bake 20โ23 minutes until golden and puffed. Rest 5 minutes, slice.
Tips
- Keep pastry cold until assembly for best puff.
- Add balsamic drizzle after baking for extra acidity.
