Roasted Cauliflower White Bean Tacos

These roasted cauliflower white bean tacos are hearty enough for dinner but straightforward enough for a weeknight. The beans add substance, and a quick lime crema keeps everything from tasting dry. Serves 4.

Ingredients:

  • 1 medium head cauliflower, cut into small florets
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 3/4 teaspoon kosher salt, divided
  • 1 can white beans, drained and rinsed
  • 8 small corn or flour tortillas
  • 1/3 cup sour cream or plain Greek yogurt
  • 1 tablespoon lime juice
  • 1 cup shredded cabbage
  • 1 avocado, sliced
  • 2 tablespoons chopped cilantro

Instructions:

  1. Heat oven to 425°F. Toss the cauliflower with olive oil, chili powder, cumin, and 1/2 teaspoon salt. Spread on a sheet pan.
  2. Roast for 20 to 25 minutes, stirring once, until tender and browned at the edges.
  3. Warm the beans in a small saucepan with a splash of water and the remaining 1/4 teaspoon salt.
  4. Stir together the sour cream and lime juice.
  5. Warm the tortillas, then fill each with beans, roasted cauliflower, cabbage, avocado, and lime crema.
  6. Finish with cilantro and serve.

Why it works:

Roasting concentrates the cauliflower's flavor and gives the tacos more texture than a quick stovetop version.

Prep 15 minutes, cook 25 minutes, total about 40 minutes.
