Sheet-Pan Lemon Herb Pork Chops with Roasted Veg

Ingredients

  • 4 bone-in pork chops (about 1-inch thick)
  • 1 lb baby potatoes, halved
  • 12 oz green beans, trimmed
  • 1 lemon (zest + juice)
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano, 1 tsp thyme
  • 1 1/4 tsp kosher salt, 1/2 tsp pepper

Method

1) Heat oven to 425°F. Toss potatoes with 1.5 tbsp oil, half the salt/pepper. Roast 12 minutes.

2) Mix remaining oil, lemon zest/juice, garlic, oregano, thyme, remaining salt/pepper.

3) Toss green beans with 1 tbsp marinade; add to pan. Nestle seasoned pork chops; brush tops with marinade.

4) Roast 12–15 minutes until chops hit 145°F and potatoes are tender. Broil 1–2 minutes for color if desired.

5) Rest 5 minutes; spoon pan juices over chops.
