Ingredients:

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 small red onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced

  • 1/2 teaspoon kosher salt
  • 1 can black beans, drained and rinsed

Instructions:
