Spicy Red Lentil Coconut Curry Soup

Ingredients

  • 2 tbsp oil
  • 1 onion, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 1 tbsp grated ginger
  • 2 tbsp red curry paste
  • 1 tsp ground turmeric
  • 1 1/2 cups red lentils, rinsed
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • 4 cups vegetable or chicken broth
  • 1 tsp salt, 1/2 tsp pepper
  • Juice of 1 lime
  • Cilantro for garnish

Method

1) Saut89 onion and carrots in oil 5 minutes. Add garlic and ginger 30 seconds.

2) Stir in curry paste and turmeric 1 minute.

3) Add lentils, tomatoes, broth, salt/pepper. Simmer 2025 minutes until lentils are tender.

4) Stir in coconut milk; simmer 3 minutes. Finish with lime juice. Garnish with cilantro.
