Teriyaki Turkey Meatballs With Rice

These teriyaki turkey meatballs with rice are practical for meal prep and easy enough for a weeknight. Serves 4.

Ingredients:

  • 1 pound ground turkey
  • 1/3 cup breadcrumbs
  • 1 egg
  • 2 scallions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon kosher salt
  • 1 tablespoon oil
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch
  • 1 cup cooked jasmine rice per 2 servings, for serving
  • Steamed broccoli or snap peas, for serving

Instructions:

  1. In a bowl, combine the turkey, breadcrumbs, egg, half the scallions, garlic, ginger, and salt. Form into 16 small meatballs.
  2. Heat the oil in a large skillet over medium heat. Cook the meatballs 10 to 12 minutes, turning occasionally, until browned and cooked through.
  3. In a small bowl, whisk together the soy sauce, honey, rice vinegar, cornstarch, and 2 tablespoons water.
  4. Pour the sauce into the skillet and cook 1 to 2 minutes, turning the meatballs until glazed.
  5. Serve over rice with broccoli or snap peas, topped with the remaining scallions.
