Creamy Mushroom and Parmesan Risotto (Stovetop)

Serves 4. Ingredients: olive oil, butter, cremini mushrooms, onion, garlic, arborio rice, dry white wine, warm broth, Parmesan, parsley, salt/pepper. Method: brown mushrooms; reserve some. Cook onion/garlic, toast rice, deglaze with wine. Add warm broth gradually, stirring until creamy with slight bite (~18–20 minutes). Finish off heat with butter, Parmesan, parsley; top with reserved mushrooms. Why it works: gradual absorption releases starch; finish adds gloss without cream.
