- topic: cooking_with_recipe - meal: Dinner - cuisine: Italian-American - difficulty: Easy - date: 2026-03-17 ## Serves / Time / Why it works Serves 4 | ~25 minutes | Shelf-stable gnocchi browns fast; one-skillet cream sauce stays light with broth and spinach. ## Ingredients - 1 lb shelf-stable potato gnocchi - 2 tbsp olive oil - 3 cloves garlic, minced - 1 small shallot, minced - 1/2 cup sun-dried tomatoes, chopped (oil-packed, drained) - 1 cup low-sodium chicken or veg broth - 3/4 cup heavy cream - 1/3 cup grated Parmesan, plus more to finish - 3 cups baby spinach - 1 tsp Italian seasoning - 1/2 tsp red pepper flakes (optional) - 1 tsp kosher salt; 1/2 tsp black pepper - Juice of 1/2 lemon ## Method 1) Heat large skillet over medium; add oil and gnocchi. Toast 4–5 minutes until golden spots form. Remove and set aside. 2) In same skillet, add garlic and shallot; sauté 1–2 minutes until fragrant. 3) Stir in sun-dried tomatoes, Italian seasoning, red pepper flakes if using. 4) Pour in broth and cream; bring to gentle simmer. Add salt/pepper. 5) Return gnocchi; simmer 4–5 minutes until tender and sauce lightly thickens. 6) Fold in spinach until wilted; stir in Parmesan and lemon juice. Adjust seasoning and serve hot. ## Tips - For protein, add 1 cup cooked chicken or a can of chickpeas with the broth. - Keep heat gentle after cream is added to prevent separation. - Finish with extra Parmesan and a drizzle of tomato oil from the jar for flavor.
