Recipe: Cucumber Tomato Feta Quinoa Salad

Serves 4 | ~20 minutes | Quinoa, vegetables, olive oil, and feta make an easy prep-ahead lunch.
Ingredients
- 2 cups cooked quinoa
- 1 cucumber, diced
- 1.5 cups cherry tomatoes, halved
- 1/3 cup feta
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 2 tbsp parsley
- 1/2 tsp salt
- 1/4 tsp pepper
Method
1) Combine quinoa, cucumber, tomatoes, feta, and parsley.
2) Whisk olive oil, vinegar, salt, and pepper.
3) Toss and chill or serve immediately.
Tips
- Add chickpeas for more protein.
- Mint also works well here.
