Recipe: Garlic Shrimp White Bean Skillet

Ingredients
- 1 lb shrimp, peeled
- 1 can cannellini beans, drained
- 3 tbsp olive oil
- 4 cloves garlic, sliced
- 1/2 tsp chili flakes
- 1 tsp salt
- 1/2 tsp pepper
- 2 cups spinach
- Juice of 1/2 lemon
Method
1) Heat olive oil in a skillet. Cook garlic and chili flakes briefly.
2) Add shrimp, salt, and pepper and cook 2 minutes per side.
3) Stir in beans and spinach and cook until spinach wilts.
4) Finish with lemon juice.
Tips
- Serve with crusty whole-grain toast.
- Parsley makes a nice garnish.
