Serves 4 | ~15 minutes | Tuna, olive oil, herbs, and vegetables make a quick protein-rich lunch.

Ingredients

  • 2 cans tuna in olive oil, drained slightly
  • 1/2 cucumber, diced
  • 2 tbsp chopped parsley
  • 1 tbsp lemon juice
  • 2 tbsp plain Greek yogurt
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 4 whole-wheat pita halves

Method

1) Mix tuna, cucumber, parsley, lemon juice, yogurt, olive oil, and salt.

2) Spoon into pita halves and serve.

Tips

  • Add capers or chopped olives for extra briny flavor.
  • Best served chilled.
