Recipe: Lemon Dill Salmon & Farro

Serves 4 | ~35 minutes | Salmon, whole grains, and herbs fit the Mediterranean diet beautifully.
Ingredients
- 4 salmon fillets
- 2 tbsp olive oil
- Juice of 1 lemon
- 2 tbsp chopped dill
- 1 tsp salt
- 1/2 tsp pepper
- 1 cup farro
- 3 cups water or broth
Method
1) Cook farro until tender, about 25 minutes.
2) Rub salmon with olive oil, lemon, dill, salt, and pepper.
3) Bake at 400°F for 10 to 12 minutes.
4) Serve salmon over farro.
Tips
- Add cucumber-tomato salad on the side.
- Use barley if farro is unavailable.
