Recipe: Olive Oil Granola with Figs

Serves 6 | ~30 minutes | Olive oil, oats, nuts, and dried fruit make a Mediterranean-friendly breakfast staple.
Ingredients
- 3 cups rolled oats
- 1/2 cup chopped almonds
- 1/4 cup pumpkin seeds
- 1/3 cup olive oil
- 1/4 cup honey
- Pinch salt
- 1/2 cup chopped dried figs
Method
1) Heat oven to 325°F.
2) Toss oats, almonds, seeds, olive oil, honey, and salt.
3) Bake 20 to 25 minutes, stirring once.
4) Cool and stir in figs.
Tips
- Store airtight.
- Great over Greek yogurt.
