Ingredients (serves 6): - 2 cups rolled oats - 1 tsp baking powder - 1.5 tsp cinnamon - 0.25 tsp salt - 2 apples, peeled and diced - 2 cups milk (dairy or unsweetened oat milk) - 2 eggs - 0.25 cup maple syrup or brown sugar - 2 tbsp melted butter or coconut oil - 1 tsp vanilla extract - 0.25 cup chopped walnuts (optional)

Instructions: 1) Heat oven to 375°F and grease 8x8-inch baking dish. 2) Mix oats, baking powder, cinnamon, salt, and apples in dish. 3) In bowl, whisk milk, eggs, maple syrup, melted butter, vanilla. 4) Pour wet mixture over oat mixture; stir to combine. 5) Top with walnuts if using. 6) Bake 35–40 min until center is set and top is golden. 7) Cool 5 min before serving.

Tips: - Reheat portions with a splash of milk. - Add raisins or berries for variation.
