Ingredients** - 2 cups rolled oats - 2 ripe bananas - 2 large eggs - 3/4 cup milk (dairy or oat) - 1 tbsp maple syrup or honey - 1 tsp baking powder - 1/2 tsp cinnamon - Pinch salt - 1 tsp vanilla - Butter or oil for cooking
Instructions** 1) Blend oats to flour. Add remaining ingredients; blend until smooth. Rest batter 5 minutes to thicken. 2) Heat lightly oiled skillet over medium. Pour 1/4 cup portions; cook 2โ3 minutes until bubbles form and edges set. Flip and cook 1โ2 minutes more. 3) Serve with fruit, yogurt, or maple.
