**Makes:** 12 muffins | **Time:** about 35 minutes
**Ingredients**
- 1/2 cup unsalted butter
- 1 cup mashed ripe banana, about 2 large bananas
- 2/3 cup packed light brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup old-fashioned oats
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon kosher salt
- 1/3 cup plain yogurt or sour cream
**Method**
1) Heat oven to 375°F and line a 12-cup muffin tin.
2) Melt butter in a small saucepan over medium heat until it foams, then turns golden and smells nutty. Transfer to a bowl and cool 5 minutes.
3) Whisk in banana, brown sugar, eggs, and vanilla.
4) In a second bowl, combine flour, oats, baking soda, baking powder, cinnamon, and salt.
5) Fold dry ingredients into wet ingredients, then mix in yogurt just until combined.
6) Divide batter into muffin cups and bake 16 to 20 minutes, until tops spring back and a tester comes out clean.
**Why it works**
Brown butter adds deeper flavor than oil, while oats keep the crumb hearty without making it dense. These muffins hold well for a few days, so they are good for breakfast prep or afternoon snacks.
