This one-pan gnocchi dinner is rich, fast, and beginner-friendly.
Ingredients (serves 4): - 1 tbsp olive oil - 3 cloves garlic, minced - 1 small onion, diced - 1 can (14 oz) crushed tomatoes - 0.75 cup heavy cream - 0.5 cup vegetable broth - 1 tsp Italian seasoning - 0.5 tsp salt - 0.25 tsp black pepper - 1 lb potato gnocchi (shelf-stable) - 0.5 cup grated Parmesan - 1 cup baby spinach - 0.25 cup chopped basil
Instructions: 1) Heat oil in large skillet over medium heat. Cook onion 3โ4 min. 2) Add garlic and cook 30 seconds. 3) Stir in tomatoes, cream, broth, seasoning, salt, and pepper. 4) Add gnocchi, simmer 5โ7 minutes until tender. 5) Stir in Parmesan and spinach until melted/wilted. 6) Finish with basil and serve.
Tips: - Add red pepper flakes for heat. - If too thick, add a splash of broth.
Time: Prep 10 min, cook 15 min, total 25 min.
