**Ingredients**
- 1 tablespoon neutral oil
- 1 pound ground turkey
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, minced
- 3 green onions, sliced
- 1 red bell pepper, finely diced
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon rice vinegar
- 2 teaspoons honey
- 1 teaspoon toasted sesame oil
- 1 head butter lettuce or romaine hearts, leaves separated
- 1 tablespoon sesame seeds
- Optional: cooked rice, chopped peanuts, lime wedges
**Method**
1) Heat oil in a skillet over medium-high heat. Add turkey and cook, breaking it apart, until no longer pink.
2) Add ginger, garlic, most of the green onions, and the bell pepper. Cook 2 to 3 minutes.
3) Stir in soy sauce, rice vinegar, honey, and sesame oil. Simmer 1 minute so the sauce lightly coats the turkey.
4) Spoon the filling into lettuce leaves and top with remaining green onions and sesame seeds. Add rice or peanuts if you want a more filling meal.
**Why it works**
Ground turkey cooks quickly and picks up the sweet-salty sauce well. Crisp lettuce keeps the dish fresh, and the recipe is flexible enough for weeknight use without a long ingredient list.
