This salmon bowl dinner is balanced, quick, and meal-prep friendly.
Ingredients (serves 4): - 1.5 lb salmon fillet, cut into portions - 2 cups cooked rice - 4 cups broccoli florets - 1 tbsp oil - 2 tbsp soy sauce - 2 tbsp honey - 1 tbsp rice vinegar - 3 cloves garlic, minced - 1 tsp grated ginger - 1 tsp sesame oil - 1 tbsp sesame seeds (optional) - Salt and pepper
Instructions: 1) Heat oven to 400°F. Toss broccoli with oil, salt, pepper; roast 15–18 min. 2) Whisk soy sauce, honey, vinegar, garlic, ginger, sesame oil. 3) Place salmon on lined pan; brush with half sauce. 4) Bake salmon 10–12 min until flaky. 5) Simmer remaining sauce in small pan 1–2 min to thicken. 6) Serve salmon with rice and broccoli; spoon extra sauce on top.
Tips: - Do not overbake salmon; remove around 125–130°F for medium. - Add lime juice at finish for brightness.
