Sheet-pan fajitas are a fast weeknight dinner with minimal cleanup and strong flavor.
Ingredients (serves 4): - 1.5 lb boneless skinless chicken breast or thighs, sliced - 3 bell peppers, sliced - 1 large onion, sliced - 2 tbsp olive oil - 1.5 tsp chili powder - 1 tsp cumin - 1 tsp smoked paprika - 0.5 tsp garlic powder - 1 tsp kosher salt - 0.5 tsp black pepper - Juice of 1 lime - 8–10 tortillas - Optional: cilantro, sour cream, salsa, shredded cheese
Instructions: 1) Heat oven to 425°F. 2) Toss chicken, peppers, and onion with oil and all spices on a sheet pan. 3) Spread evenly in one layer. 4) Roast 18–22 minutes, stirring once halfway, until chicken reaches 165°F. 5) Squeeze lime juice over pan and toss. 6) Warm tortillas and serve with toppings.
Tips: - Use thighs for juicier texture. - Avoid overcrowding the pan for better browning.
