**Ingredients**
- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1 small yellow onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes, optional
- 2 cans (15 oz each) cannellini beans, drained and rinsed
- 3 cups chicken broth
- 1 can (14 oz) diced tomatoes
- 1 bunch kale, stems removed and chopped
- 1 tablespoon lemon juice
- Salt and black pepper
- Grated Parmesan, for serving
**Method**
1) Heat oil in a deep skillet or Dutch oven over medium heat. Add sausage and cook, breaking it up, until browned.
2) Add onion and carrots. Cook 5 minutes until softened. Stir in garlic, oregano, and red pepper flakes; cook 30 seconds.
3) Add beans, broth, and tomatoes. Simmer 12 to 15 minutes so the flavors combine.
4) Stir in kale and cook 4 to 5 minutes until tender.
5) Finish with lemon juice and black pepper. Taste before adding extra salt because sausage and broth may already be seasoned.
6) Serve in bowls with Parmesan on top.
**Why it works**
A small amount of sausage flavors the whole pot, and the beans make the stew filling without needing a long cook. Lemon at the end lifts the richness and keeps the bowl balanced.
