Ingredients
- 2 tbsp oil
- 1 onion, diced
- 2 carrots, diced
- 3 cloves garlic, minced
- 1 tbsp grated ginger
- 2 tbsp red curry paste
- 1 tsp ground turmeric
- 1 1/2 cups red lentils, rinsed
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- 4 cups vegetable or chicken broth
- 1 tsp salt, 1/2 tsp pepper
- Juice of 1 lime
- Cilantro for garnish
Method
- Saut 89 onion and carrots in oil 5 minutes. Add garlic and ginger 30 seconds.
- Stir in curry paste and turmeric 1 minute.
- Add lentils, tomatoes, broth, salt/pepper. Simmer 20–25 minutes until lentils are tender.
- Stir in coconut milk; simmer 3 minutes. Finish with lime juice. Garnish with cilantro.
