Ingredients - 2 tbsp oil - 1 onion, diced - 2 carrots, diced - 3 cloves garlic, minced - 1 tbsp grated ginger - 2 tbsp red curry paste - 1 tsp ground turmeric - 1 1/2 cups red lentils, rinsed - 1 can (14 oz) diced tomatoes - 1 can (14 oz) coconut milk - 4 cups vegetable or chicken broth - 1 tsp salt, 1/2 tsp pepper - Juice of 1 lime - Cilantro for garnish

Method 1) Sauté onion and carrots in oil 5 minutes. Add garlic and ginger for 30 seconds. 2) Stir in curry paste and turmeric 1 minute. 3) Add lentils, tomatoes, broth, salt/pepper.
