Serves: 4 | Total time: ~25 minutes | Why it works: High-heat sear keeps beef tender; basil and chili add brightness.
Ingredients
- 1 lb flank or sirloin, thinly sliced
- 2 cups green beans, trimmed
- 1 red bell pepper, sliced
- 4 cloves garlic, minced
- 1–2 Thai chilies or 1/2 tsp chili flakes
- 2 tbsp neutral oil
- Sauce: 3 tbsp soy sauce, 1 tbsp fish sauce, 1 tbsp oyster sauce, 1 tbsp brown sugar, 2 tsp rice vinegar
- 1 cup fresh Thai basil (or sweet basil)
- Cooked jasmine rice to serve
Instructions 1) Stir sauce ingredients together. 2) Heat 1 tbsp oil in a wok/skillet on high. Sear beef in two batches 1–2 minutes; remove. 3) Add remaining oil, then green beans; cook 3 minutes. Add pepper, garlic, chili; cook 1 minute. 4) Return beef with any juices; pour sauce; toss 1–2 minutes until coated. Turn off heat, fold in basil to wilt. 5) Serve over rice.
Tips - Slice beef thinly against grain; partial freeze for easier cutting. - Don’t overcook basil—add at the end.
