Recipe: Roasted Cauliflower Chickpea Bowls

Serves 4 | ~35 minutes | Roasted vegetables, chickpeas, and tahini dressing make a filling meatless bowl.
Ingredients
- 1 head cauliflower, florets
- 1 can chickpeas, drained
- 3 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 cup tahini
- 2 tbsp lemon juice
- Water as needed
- 2 cups cooked quinoa
Method
1) Heat oven to 425°F. Toss cauliflower and chickpeas with olive oil and spices.
2) Roast 25 minutes until browned.
3) Whisk tahini, lemon juice, and enough water to make a drizzle.
4) Serve roasted mixture over quinoa with tahini sauce.
Tips
- Add chopped parsley before serving.
- Great for meal prep.
