Recipe: Roasted Eggplant Tomato Pasta

Serves 4 | ~35 minutes | Olive oil roasted eggplant adds richness to a light tomato pasta.
Ingredients
- 12 oz whole-wheat pasta
- 1 eggplant, cubed
- 3 tbsp olive oil
- 3 cloves garlic
- 1 can crushed tomatoes
- 1 tsp oregano
- 1 tsp salt
- 1/2 tsp pepper
- Basil for serving
Method
1) Toss eggplant with olive oil and roast at 425°F for 25 minutes.
2) Cook pasta.
3) Simmer garlic, tomatoes, oregano, salt, and pepper for 10 minutes.
4) Toss pasta with sauce and roasted eggplant.
Tips
- Add a spoon of ricotta if desired.
- Use penne or spaghetti.
