Ingredients

  • 1 to 1.5 lbs protein or 2 cans beans
  • 2 to 4 cups vegetables
  • 2 to 3 tbsp olive oil
  • 2 to 4 cloves garlic
  • 1 tsp dried oregano or mixed herbs
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • Lemon for serving

Method

1) Heat the oven or skillet and prep the vegetables and main protein.

2) Toss or season everything with olive oil, garlic, herbs, salt, and pepper.

3) Roast, simmer, or sauté until the protein is cooked and vegetables are tender.

4) Finish with lemon and serve warm.

Tips

  • Serve with a side of whole grains if you want a bigger meal.
