Recipe: Tomato Basil Chickpea Toasts

Serves 4 | ~15 minutes | Mashed chickpeas, tomatoes, basil, and olive oil make a quick no-cook lunch.
Ingredients
- 1 can chickpeas
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1 cup diced tomatoes
- 2 tbsp chopped basil
- 4 slices whole-grain bread
Method
1) Mash chickpeas with olive oil, lemon juice, and salt.
2) Stir basil into tomatoes.
3) Toast bread, spread chickpeas, and top with tomatoes.
Tips
- Rub toast with garlic if you like.
- Best eaten right away.
