Recipe: Warm Cinnamon Apple Barley Bowls

Ingredients
- 1 cup quick-cooking barley
- 3 cups water
- 2 apples, diced
- 1 tbsp olive oil
- 1 tsp cinnamon
- 2 tbsp raisins
- 1/4 cup walnuts
- Pinch salt
Method
1) Cook barley in water with salt until tender.
2) Sauté apples in olive oil with cinnamon for 4 to 5 minutes.
3) Spoon barley into bowls and top with apples, raisins, and walnuts.
Tips
- Drizzle with a little honey if desired.
- Pears work too.
